Ingredients:
225g Self-Raising Flour (2 cups self-rising)
Pinch Salt
110g Butter (1 stick)
6 tbsp Milk
675g Cooking Apples, peeled, cored and diced (3 1/2 cups)
1 Orange - zest and juice
1 tbsp freshly grated Ginger
225g Demerara Sugar (1 cup brown sugar)
Method:
Grease the inside of a 1 1/2 litre pudding basin.
Sift the flour with the salt and mix with the butter.
Add the milk to make a soft dough.
Roll the pastry out on a floured work surface to give a circle large enough to line the basin.
Cut out about a quarter of it and set aside to make the lid.
Press the pastry gently into place so the basin is completely lined.
Mix the Apples, Orange Juice and Zest, Ginger and Sugar together, fill the pastry with the mixture.
Roll out the remaining pastry to form a lid, place over the top of the basin and pinch the edges together all around to seal in the filling.
Stand the pudding in a slow cooker, and pour in enough boiling water to come about half way up the sides.
Place on medium heat and leave to bubble away happily for approximately 2 hours, alternatively you can cook in a Microwave for 8-10 minutes (850w adjust times depending on the power of your machine) - leave to stand for a few minutes before serving.
To serve carefully run a knife around the edge of the basin and turn upside down on to a plate.
